It depends.

On or off can take as little as one minute with either a hoist or
two people.  (One person can lift the top on or off but it is 
difficult, one slip and there goes the back and paint job :'O)

It will obviously add some time to do the proper prep work and
cleaning if, like me, you put it on in Nov. and remove it in March.
It's much better to store the soft top clean and dry, remove the
summer's cob webs and dust, put a coat of wax on the hardtop, etc.
