Here here! While on spring break two weeks ago, that's exactly what I did, though I did it because I'm sick of diesel fumes and general interstate suckiness. I went from Atlanta to Montgomery, AL, to Pensacola, FL, to Gainesville FL, and back to Atlanta, and never once touched an interstated. The Pensacola to Gainesville run was particularly nice since I got to run along the coast for several hours...beautiful white beaches! Love that national seashore! Of course, following the coast probably added about 3 hours to the trip, but I ended up using substantially less gas (on that leg alone). Sun the whole way, whattaburn! Anyway, good idea.
