This is what the 160 degree thermostat modification does. Apparently 160 degrees is about optimal -- it made a difference on my car. I'm with you though -- I'd rather use some sort of device rather than making the engine run colder than normal. Plus, I've got to believe that the engine will eventually run at the same temperature as with the stock thermo at some point. If you want to buy the 160 thermo, I found it at a Napa parts store.
