If I recall the debate correctly, the reading on the gauge won't change. The difference in the thermostats is that the 160 will open at a lower temperature than the factory unit, thus allowing coolant to reach the radiator sooner. The operating temperature of the engine is much higher than 160 degrees, so the 160 is not a limit, but rather the trigger temperature at which the thermostat opens.
