Jay - here's my cheap-to-try guess:

With evrything changed out, perhaps the ECU needs to be reset.
Disconnect the battery for 30 min, reconnect & drive. 

Other ideas:
What plugs & wires are you using? 
Did you change out both fuel filters - I believe there may be one in the
tank as well as under the hood.
